008 Tofu_ Paneer _ 200g Brown Rice - well rinsed 20ml oil 1 teaspoon / 7g minced ginger 1 teaspoon / 7g minced garlic

1 tin good quality chopped tomatoes (crushed) ¾ teaspoon salt ½ teaspoon / 0.5g turmeric ¼ teaspoon / 0.5g cayenne/chilli pepper 1 tablespoon / 15g tomato puree 2 – 3 tablespoons / 50g of Greek yogurt 200g superfirm tofu (chopped into even-sized pieces) 1 teaspoon / 7g garam masala 5g Coriander to garnish (optional)

  1. Take a small saucepan and place in the rice; add cold water so there is about 2inches of water covering the rice. You can measure this using one finger pointed in the water, just touching the rice.
