Ingredients For the Base 1 roll puff pastry 150g creme fraiche For the Topping 2 small potatoes - peeled and sliced very thinly using a potato peeler (keep using the peeler to make slices until you can’t hold the potato any more, then use a knife to finish the last bit) 1 leek - outer leaves removed and cut into rounds slightly thicker than £1 coin, then rinsed 100g cheddar - grated 3 sprigs rosemary - sprigs removed from woody stem and finely chopped Salt and pepper Salad (optional, to serve)
