Ingredients 2 tbsp olive oil 100g chorizo - cubed or sliced 1 red onion - peeled and finely sliced 250g button mushrooms - finely sliced 1 small red chilli - finely chopped (seeds removed) 1 tsp paprika & 1 tsp cajun spice 1 pinch salt 2 tortilla wraps 2 sprigs of fresh coriander - finely chopped 100g natural yoghurt Zest and juice of 1/2 a lemon One bag mixed winter salad leaves 4 tbsp olive oil and 2 tbsp lemon juice Pinch salt & pepper
